Open Faced Breakfast Sandwich

Soy-Free, Vegetarian, Nut-Free, Organic 

It’s time again for another favorite weekend indulgence, and this breakfast sandwich is one of my top favorites. I try to eat gluten and grain free the majority of the time, but when I’m going to treat myself I always go for a good sourdough bread. Sourdough not only makes everything taste better (in my opinion!) but is also easier on my digestive system.

I work alongside a doctor who uses people’s genetics to help them fine-tune their dietary needs and combat inflammation, because inflammation is the root of all dis-ease. I happen to have all of the genes that predispose me to not break down gluten well, so I choose to limit my exposure. I know that if I go carb-crazy I get bloated, my stomach hurts, I get heartburn, I get bags under my eyes – the list goes on and on, but my immune and digestive systems basically become a mess. By limiting my exposure I allow these genetic pathways to open up so that they function better when I do decide to ingest wheat. Which is why getting to make and eat this sandwich is super exciting for me!

Double plus – the fat still outweighs the carbohydrate and protein loads, so if you’re working towards ketosis this would be a great meal to have before a big hike or workout day!

Whether you eat wheat all of the time, or just on occasion, I think you’ll find this to be as yummy and satisfying as I do!

The Goods:

The How-To:

  1. Heat oil in a small skillet until over medium heat. Add egg whites and sprinkle generously with salt, pepper, paprika, and red pepper flakes.
  2. When starting to bubble, flip egg whites and season other side. Cook until desired doneness.
  3. Top toasted sourdough with 1/2 avocado. I like to season mine with salt & pepper & red pepper flakes – the more the better!
  4. Stack kale on top of avo toast.
  5. When eggs are ready, stack eggs on top of kale.
  6. Sprinkle generously with feta and green onion.
  7. Enjoy! (with loads of hot sauce, if you’re a fanatic like I am)
